Ingredients

  • 300 grams stale tsoureki (bun) cut into small cubes
  • 2 teacup strawberries cut into small squares
  • 1 teacup blueberries
  • 100 grams chocolate drops
  • 6 piece whole eggs
  • 1 - 3/4 teacup fresh cow milk
  • 1- 1/2 teacup low fat cream
  • 1/3 teacup sunflower oil or melted butter
  • 2/3 teacup granulated sugar
  • 1 teaspoon cow's butter for the pan
  • 1 piece vanillin
  • 1 piece zest of a lemon

For the topping:

  • 3 tablespoon almond fillet

Instructions

  • Preheat the oven to 180℃ in the air.
  • In a deep bowl, whisk the eggs with the milk, cream, sunflower oil, sugar, vanilla and lemon zest.
  • In an ovenproof baking pan 35 x 40 cm and after lightly buttering it, place the tsoureki bun pieces cut into small pieces and sprinkle with the chocolate drops.
  • Then scatter the strawberries and blueberry pieces over the entire surface of the baking tray and sprinkle with the egg mixture prepared, making sure that the bun is thoroughly wet.
  • Allow 30 minutes for the mixture to soak in and just before putting the baking tray in the oven, sprinkle with almond kernels.
  • Bake for about 30 - 35 minutes depending on the oven.
  • When the pudding is ready, let it rest on the counter for 20 minutes and serve it cut into pieces.

Notes

Tip: You can replace the brioche with 12 small croissants cut into cubes or yeast bread without the crust.
