Ingredients

  • 250 grams flour for all uses
  • 150 grams almond flour
  • 180 grams butter or margarine at room temperature
  • 100 grams granulated sugar
  • 1 big egg
  • 2- 3 drops almond scent

For the topping:

  • unsalted white almonds

Instructions

  • In a mixer's bowl, add the butter and granulated sugar and beat with the paddle attachment for 5 minutes until smooth.
  • Then add the egg and beat to combine with the rest of the ingredients and add the almond flavouring.
  • Finally add the almond flour alternately with the all-purpose flour and mix first with a spoon and then knead with your hands until you get a non-sticky dough. If the dough sticks to the hands add a little more flour.
  • Preheat the oven to 180℃ degrees.
  • Form balls of dough of the same size (40 grams) to bake all the cookies in the same time and place each ball on the oven tray lined with non-stick paper.
  • Place a whole almond without the skin in the centre of each biscuit and press gently to flatten it. Make sure there is a gap between the cookies because they will puff up during baking.
  • Bake in the air for about 20 minutes depending on the oven or until golden brown.
  • When the cookies are very cool, store them in a metal container with a lid.
