Fluffy and fragrant almond biscuits with almonds and fresh butter ideal for coffee, tea or as a treat at the office!

Ingredients
250gramsflourfor all uses
150gramsalmond flour
180gramsbutter or margarineat room temperature
100gramsgranulated sugar
1bigegg
2- 3dropsalmond scent
For the topping:
unsalted white almonds
Instructions
In a mixer's bowl, add the butter and granulated sugar and beat with the paddle attachment for 5 minutes until smooth.
Then add the egg and beat to combine with the rest of the ingredients and add the almond flavouring.
Finally add the almond flour alternately with the all-purpose flour and mix first with a spoon and then knead with your hands until you get a non-sticky dough. If the dough sticks to the hands add a little more flour.
Preheat the oven to 180℃ degrees.
Form balls of dough of the same size (40 grams) to bake all the cookies in the same time and place each ball on the oven tray lined with non-stick paper.
Place a whole almond without the skin in the centre of each biscuit and press gently to flatten it. Make sure there is a gap between the cookies because they will puff up during baking.
Bake in the air for about 20 minutes depending on the oven or until golden brown.
When the cookies are very cool, store them in a metal container with a lid.
