Ingredients

  • 500 grams "Gigantes" beans (large white beans)
  • 1 piece sausage cut into slices
  • 2 piece dried onions finely chopped
  • 2 clove garlic
  • 2 piece Florina peppers (red peppers) cut into squares
  • 2 piece carrots diced
  • 1/2 bunch celery finely chopped, only the leaves
  • 100 grams tomato paste
  • 200 grams canned tomatoes
  • 1.5 cup olive oil
  • 1/2 tablespoon coriander powder
  • 1/2 tablespoon spice powder
  • 1 tablespoon sweet paprika powder
  • salt
  • Pepper

Instructions

  • Soak the gigantes beans overnight in a bowl filled with water up to the top so that it completely covers them.
  • The next day, wash them very well and boil them for half an hour in water without salt.
  •  In a saucepan, once hot, pour half a cup of olive oil and sauté the onion, Florina peppers, carrot and spices until they wilt.
  • After a while, add the tomato paste to sauté with a little pepper and set aside
  • Drain the gigantes beans and place them in an ovenproof dish, along with the vegetable sauce, canned tomatoes, remaining olive oil, a little salt and pepper and enough water to cover them.
  • Bake in a preheated oven at 180℃ for about an hour and a half (depending on the oven). Add a little water if necessary during baking.
  • While the gigantes are baking in the oven, pass the sausage slices through the pan a little to shield them.
  • When the sausage has thickened, add the sausage for the last ten minutes before removing from the oven. Serve with freshly baked bread.
