Ingredients
500grams"Gigantes" beans (large white beans)
1piecesausagecut into slices
2piecedried onionsfinely chopped
2clovegarlic
2pieceFlorina peppers (red peppers)cut into squares
2piececarrotsdiced
1/2bunchceleryfinely chopped, only the leaves
100gramstomato paste
200gramscanned tomatoes
1.5cupolive oil
1/2tablespooncoriander powder
1/2tablespoonspice powder
1tablespoonsweet paprika powder
salt

Instructions
Soak the gigantes beans overnight in a bowl filled with water up to the top so that it completely covers them.
The next day, wash them very well and boil them for half an hour in water without salt.
In a saucepan, once hot, pour half a cup of olive oil and sauté the onion, Florina peppers, carrot and spices until they wilt.
After a while, add the tomato paste to sauté with a little pepper and set aside
Drain the gigantes beans and place them in an ovenproof dish, along with the vegetable sauce, canned tomatoes, remaining olive oil, a little salt and pepper and enough water to cover them.
Bake in a preheated oven at 180℃ for about an hour and a half (depending on the oven). Add a little water if necessary during baking.
While the gigantes are baking in the oven, pass the sausage slices through the pan a little to shield them.
When the sausage has thickened, add the sausage for the last ten minutes before removing from the oven. Serve with freshly baked bread.
