- 1 sheet puff pastry
- 4 - 5 tablespoon apricot or apple jam
- 4- 5 apples medium size
- 2 - 3 tablespoon brown sugar
- 3 - 4 tablespoon almond fillet
- 1 piece egg yolk
- 1 tablespoon fresh cow milk
For the topping:
- powdered sugar
Instructions
- Preheat the oven to 190℃ air circulation.
- Remove the puff pastry sheet from the fridge, place it on a clean work surface and use a rolling pin to flatten it slightly.
- Place the puff pastry sheet and the paper it was wrapped in on the oven tray with care.
- Close the dough 1 cm around the perimeter to make a tart rim. Prick the inside of the puff pastry with a fork to prevent it from bubbling during baking.
- Using a spoon, spread the apricot jam all over the surface of the puff pastry.
- Cut the apples in half and remove the cores, then cut them into very thin slices (1,5 mm thick) using a mandolin or a sharp knife without peeling the skin.
- Lay the apples on the puff pastry so that each slice covers 3/4 of the other , making sure to cover the entire surface and that the jam is not visible.
- In a bowl, add the egg yolk and a tablespoon of milk.Mix with a brush and brush the mixture around the perimeter of the cornice.
