Burger with white bean burgers
Ingredients
For the white bean burger:
- 400 grams dry white beans
- 2 piece medium-sized zucchini grated on a coarse onion grater
- 1 piece carrot grated on a coarse onion grater
- 1 piece dry onion grated on a coarse grater
- 1 whole egg
- 150 grams feta cheese grated
- 100 grams flour for all uses
- 1/2 bunch parsley finely chopped, just the leaves
- 1 teaspoon oregano dried
- 1 teaspoon dried thyme
- 1 teaspoon cilantro chopped
- 1/2 teaspoon grated nutmeg
- 1 cup olive oil
- salt
- freshly ground pepper
Ingredients for the avocado spread:
- 2 piece ripe avocado
- 1 piece tomato seedless chopped into very small pieces
- 3 piece spring onions finely chopped, only the white part
- 1/2 bunch parsley finely chopped, just the leaves
- 3 tablespoon olive oil
- salt
- freshly ground pepper
To serve:
- 4 piece burger
- 2 piece tomatoes cut into thin slices
- 2 piece dry onions cut into slices and briefly fried in a non-stick pan with a little olive oil
- 4 eaves curly lettuce without the stems
Instructions
- Soak the beans from the night before in a deep bowl with plenty of water to cover them completely and four extra fingers of water.
- The next day, drain the beans, rinse them very well and boil them with plenty of water very well without salt because they will harden.
- Then drain them and run them through a blender to make them creamy.
- In a deep bowl, add the cream of beans along with all the vegetables passed through the grater, the herbs, spices , dry oregano, dry thyme, egg, flour, olive oil, salt and pepper and mix with a spoon and then knead with your hands.
- Cover with plastic wrap and refrigerate for at least 2 hours to allow the ingredients to come together.
- Then, with greased hands, knead 4 large burgers and place them on a baking sheet lined with non-stick paper.
- Bake in a preheated oven at 180 C on the resistance for about 45 minutes without turning them over.

- Cut the avocado lengthwise and remove the pit with a knife and use a spoon to scoop out the avocado skin.

- Coat the inside of the burgers a little bit with the non-stick pan just enough to get a little bit of color, then place the bottom burger bun on a plate.
