Ingredients
For the white bean burger:
400gramsdry white beans
2piecemedium-sized zucchini grated on a coarse onion grater
1piececarrot grated on a coarse onion grater
1piecedry oniongrated on a coarse grater
1whole egg
150gramsfeta cheesegrated
100gramsflour for all uses
1/2bunchparsleyfinely chopped, just the leaves
1teaspoonoregano dried
1teaspoondried thyme
1teaspooncilantrochopped
1/2teaspoongrated nutmeg
1cupolive oil
salt
freshly ground pepper
Ingredients for the avocado spread:
2pieceripe avocado
1piecetomato seedless chopped into very small pieces
3piecespring onionsfinely chopped, only the white part
1/2bunchparsley finely chopped, just the leaves
3tablespoonolive oil
salt
freshly ground pepper
To serve:
4pieceburger
2piecetomatoes cut into thin slices
2piecedry onions cut into slices and briefly fried in a non-stick pan with a little olive oil
4eavescurly lettuce without the stems
Instructions
Soak the beans from the night before in a deep bowl with plenty of water to cover them completely and four extra fingers of water.
The next day, drain the beans, rinse them very well and boil them with plenty of water very well without salt because they will harden.
Then drain them and run them through a blender to make them creamy.
In a deep bowl, add the cream of beans along with all the vegetables passed through the grater, the herbs, spices , dry oregano, dry thyme, egg, flour, olive oil, salt and pepper and mix with a spoon and then knead with your hands.
Cover with plastic wrap and refrigerate for at least 2 hours to allow the ingredients to come together.
Then, with greased hands, knead 4 large burgers and place them on a baking sheet lined with non-stick paper.
Bake in a preheated oven at 180 C on the resistance for about 45 minutes without turning them over.
For the avocado and tomato spread:
Cut the avocado lengthwise and remove the pit with a knife and use a spoon to scoop out the avocado skin.
Place the avocado in the bowl and mash it with a fork until it becomes creamy.
Add thechopped tomato along with all the ingredients and mix with a spoon to combinethe ingredients.
To assemblethe burger:
Coat the inside of the burgers a little bit with the non-stick pan just enough to get a little bit of color, then place the bottom burger bun on a plate.
Top with a generous layer of the avocado spread, tomato slices, white bean burger, onion slices, leaves from the curried lettuce and finally top with the top burger bun and serve immediately .
