Fattoush is a refreshing salad from Levantine cuisine and is particularly popular in Lebanon.It contains mixed greens and various other vegetables such as radishes and tomatoes, while the ingredients that give the salad its unique sweet and sour taste are sumac and pomegranate molasses. It is served together with toasted Arabic bread cut into small pieces.

Ingredients
1piececucumbercut into very thin slices
1piecetomatocut into small squares
5 - 6pieceradishescut into thin slices
1piececarrotcut into thin slices
1piecered peppercut into small squares
3- 4piecespring onionscut into slices
2-3φύλλαred salad
2 - 3 φύλλαgreen salad
1bunchparsleychopped
1μικρό ματσάκιfresh mint
1piecelarge Arabic pita breadcut into pieces (optional)
For the Dressing:
2teaspoontahini
2tablespoonolive oil
1piecelemon juice
1sharp teaspoonsumac(oriental spice)
1teaspoonpomegranatemolasses or petimezi
1teaspoondried mint
salt
Instructions
Wash and clean the vegetables and dry them thoroughly.
Cut all the vegetables into very small pieces and place them in a deep salad bowl. Cover the bowl with transparent wrap and refrigerate until ready to serve.
Prepare the dressing by combining all the ingredients in a bowl and mix well with a whisk.
When ready to serve, pour the dressing over the salad and toss to combine the ingredients.
Serve the salad chilled with toasted and cut Arabic pita bread into small pieces.
