Ingredients
For the salad:
2pieceArugula
1piecegreen applethinly sliced
3 - 4pieceprosciutto
3tablespoonpomegranate seeds
50gramswalnutscoarsely chopped
For the Dressing:
150gramsolive oil
50gramspomegranate juice
50gramsDijon mustard
50gramsred balsamic vinegar
salt
freshly ground pepper
Instructions
Wash the arugula thoroughly, dry it with a clean towel, remove the stems, and place it in a deep salad bowl.
Add the coarsely chopped walnuts and pomegranate seeds, and mix well.
Prepare the dressing by blending pomegranate juice, Dijon mustard, balsamic vinegar, salt, and pepper in a blender until well combined.
While blending, gradually pour the olive oil in a thin stream until the dressing thickens.
Pour the dressing over the salad, ensuring that all the ingredients are well coated, and gently toss.
Transfer the salad to a serving bowl and garnish with thinly sliced green apple. Roll the prosciutto slices into rose shapes and place them on top of the salad.
